Sweet Potato & Black Bean Chili

Ingredients

  • 1 tbsp olive oil
  • 1 green pepper, diced
  • 1 white onion, diced
  • 1 sweet potato, peeled & cubed
  • 1 can organic black beans, drained
  • 1 can organic fire roasted tomatoes
  • 1 can organic tomato sauce
  • 1 cup vegetable broth
  • 1 packet organic chili powder

Preparation

  • Chop onion, sweet potato and green pepper
  • Saute with one tbsp olive oil for approximately 8-10 minutes
  • Add the drained beans, fire roasted tomatoes and tomato sauce to cooked veggies
  • Combine and cook for about 3-5 more minutes before transferring to slow cooker
  • Combine all ingredients in slow cooker (including chili packet & one cup of veggie broth)
  • Stir well & cook on high for 3-4 hours
  • Add desired toppings & enjoy!
