Sweet Potato & Black Bean Chili
Ingredients
- 1 tbsp olive oil
- 1 green pepper, diced
- 1 white onion, diced
- 1 sweet potato, peeled & cubed
- 1 can organic black beans, drained
- 1 can organic fire roasted tomatoes
- 1 can organic tomato sauce
- 1 cup vegetable broth
- 1 packet organic chili powder
Preparation
- Chop onion, sweet potato and green pepper
- Saute with one tbsp olive oil for approximately 8-10 minutes
- Add the drained beans, fire roasted tomatoes and tomato sauce to cooked veggies
- Combine and cook for about 3-5 more minutes before transferring to slow cooker
- Combine all ingredients in slow cooker (including chili packet & one cup of veggie broth)
- Stir well & cook on high for 3-4 hours
- Add desired toppings & enjoy!
