Roasted Ratatouille

Ingredients

  • 1/2 eggplant
  • 1 zucchini
  • 1 yellow squash
  • 1 pint grape tomatoes
  • 5 tbsp of olive oil
  • 3 tbsp minced garlic
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp freshly cracked black pepper

Preparation

  • Preheat oven to 450°F/232°C degrees
  • Chop veggies & combine in large mixing bowl
  • In a separate small bowl, mix olive oil, garlic, oregano, thyme and black pepper
  • Combine mixture with veggies and stir evenly
  • Place mixture on baking sheet & bake for 15 minutes
  • Put under broiler for 5 more minutes
