Roasted Ratatouille
Ingredients
- 1/2 eggplant
- 1 zucchini
- 1 yellow squash
- 1 pint grape tomatoes
- 5 tbsp of olive oil
- 3 tbsp minced garlic
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp freshly cracked black pepper
Preparation
- Preheat oven to 450°F/232°C degrees
- Chop veggies & combine in large mixing bowl
- In a separate small bowl, mix olive oil, garlic, oregano, thyme and black pepper
- Combine mixture with veggies and stir evenly
- Place mixture on baking sheet & bake for 15 minutes
- Put under broiler for 5 more minutes
