Quinoa Tabbouli Salad
Ingredients
¼ cup Quinoa
1 medium size onion- very finely chopped
5 cups very finely chopped parsley
¼ cup finely chopped mint
3 large tomatoes – finely chopped
½ green Pepper (Optional)
1 small Persian Cucumber (Optional)
Salt, pepper, cinnamon
¼ cup Lemon juice
¼ cup Olive oil
Preparation
Rinse Quinoa very well
Cook Quinoa as directed on the package and leave on the side
In a large bowl, mix chopped onions with salt, pepper, and cinnamon until onions turn brownish
Add quinoa, parsley, mint, and tomatoes on top of that mixture and mix
lemon juice and olive oil. Mix all ingredients one more time.
**You can enjoy this salad in Lettuce wraps as well.
