Green Chard Soup

Ingredients

  • ‍Green Chard ~1 bunch
  • Cilantro ~1 bunch
  • ‍Brown Lentils ~1 and ½ cups
  • Onion ~ 1 (Big)
  • Potato ~ 1
  • Lemons ~ 2 Squeezed
  • Garlic ~ 8 Cloves
  • Olive Oil ~ Quarter Cup
  • Water
  • Salt & Pepper to taste

Preparation

  • Wash and Rinse the lentils and leave them on the side for now.
  • Wash the green chard and chop thin
  • Chop the onion
  • In a pot combine the chard, lentils and onions
  • Wash and chop the cilantro and then add garlic on top with some salt and mince/crush to get a little mushy then add to pot
  • Cut potatoes into cubes and add
  • Add oil
  • Cover the whole mixture with water (1 inch over) – add salt and pepper to tasteand let it boil
  • Smash and stir some of the potatoes so it acts like a thickener
  • Salt & Pepper to taste Add lemons to taste
