Green Chard Soup
Ingredients
- Green Chard ~1 bunch
- Cilantro ~1 bunch
- Brown Lentils ~1 and ½ cups
- Onion ~ 1 (Big)
- Potato ~ 1
- Lemons ~ 2 Squeezed
- Garlic ~ 8 Cloves
- Olive Oil ~ Quarter Cup
- Water
- Salt & Pepper to taste
Preparation
- Wash and Rinse the lentils and leave them on the side for now.
- Wash the green chard and chop thin
- Chop the onion
- In a pot combine the chard, lentils and onions
- Wash and chop the cilantro and then add garlic on top with some salt and mince/crush to get a little mushy then add to pot
- Cut potatoes into cubes and add
- Add oil
- Cover the whole mixture with water (1 inch over) – add salt and pepper to tasteand let it boil
- Smash and stir some of the potatoes so it acts like a thickener
- Salt & Pepper to taste Add lemons to taste
