Bruschetta Stuffed Avocado Boats

Ingredients

  • 1 avocado
  • 8 cherry tomatoes, diced
  • 1/3 cup red onion, diced
  • Splash of balsamic vinegar
  • 1/2 tsp dried oregano

Preparation

  • Slice avocado and remove pit
  • Add tomato and onion into a bowl, and splash balsamic vinegar to coat
  • Add dried herbs and stir together
  • Allow bruschetta to sit and marinate for 15 minutes
  • Spoon bruschetta onto avocado
